One that I have found rather interesting is Alabama White BBQ sauce. It is a mayo based sauce and you can find numerous variations on the net. I prefer the ones that use horseradish and garlic, but like pretty much all of them. This type of sauce is great on chicken and pork. For chicken, I like to dip or liberally coat the meat with it about 15 minutes before I take it off of the smoker, then use the remaining sauce for a dipping sauce.

Before you turn your nose up at, I recommend trying it. I did not think I would like it either when I first came across it in northern Alabama years ago, but a friend talked me into trying it.

1 1/2 cups real mayo (not fat free, not sandwich spread, but Kraft or Dukes Mayo)
1/4 cup apple cider vinegar
1/4 prepared horseradish sauce
2 tablespoons black pepper
1 teaspoon salt
1 teaspoon sugar
1 clove garlic minced
1/2 teaspoon cayenne pepper (ground red pepper)

You can vary the amount of red pepper to suit your preference for heat, the 1/2 teaspoon makes it a little spicy but not real hot.

One bone-in boston butt

Debone boston butt in such a manner that you can filet the butt in a spiral manner to end up with a long piece of meat that is about 1 to 1 1/2 inch thick.

I then take and liberally apply garlic powder, seasoned salt, pepper, lemon and/or orange slices, slivers of onion, and any other seasoning I have at hand that fancies my attention and apply it all to one side of the meat.

Then roll the meat up tightly and tie using kitchen twine or if none is available you can use skewers to hold the meat in a roll.

Place on a smoker using your favorite wood for light smoke until a thermometer inserted reads 170 if you want to slice it or 180 if you want to shred it.

Use the white bbq recipe as a dipping sauce.

Or mix your favorite Carolina style sauce.
