View Full Version : what kind of pit do you own

With Memorial Day coming up next weekend,I see alot of people buying new Bar BQ pits,so what kind of pit do you own...I have an old smokie.....thats right Poot ,they are still being used ...so who is thinking about getting a pit this weekend......and what will you be cooking....any briskets being cook?

Ummmmmmmm I have a grill made by my buddy. its made of a tank end with a grate that fits over it and is great for grillin a steak or some chikken or shrimps or a lil sausage. but for actual Bar b que I have a smoker with a firebox on on end and a vertical cabinet on the other. This is for briskets or ribs or stuff ya wanna slow cook. It came from academy and is bout 5 yrs old. Will easily last another 5 and cost a lil less than 250.
My udder nudder buddy haz a Pit built on a tandem axle trailer that will easily handle 10 large briskets. It was custom built and he bought it used for 2 k from a mutual friend. When he fires that baby up theres some serious eatin bout to happen.

I have a Master Forge 5 burner grill and a homemade charcoal job, i also have a GOSM 38" gas fired smoker, will hold 10m racks of ribs or 5 12lb briskets and a Meco bullet smoker and a pig pit plus 2 turkey fryers... everything will be fired up sunday but the pig pit......

FiNALLY! People who know what BBQ is. Up here they send burger patties or hot doggies swimmin in bbq sauce after they grill em and call it bbq. >:-( there are sone good bbq joints up here but we're lacking. My dad makes some killer ribs and briskets. Gotta get a smoker of my own...

The serious cooking is usually on this smoker. However, most of the time we just borrow his step brother's grill on wheels. :D

But, most of the time....and since it's just the two of us, most cooking goes on the gas Weber.

My favorite bbq on the smoker is ribs.

Nice pit Mrs.Art.....but i noticed albert isnt in this photo.....I also noticed that your front yard is very huge.....have fun mowing this summer.....I bet you spent a few hundred in fertilizer...didnt you?

A pic of Albert is on the smoke stack. It's that orange can. :D

And in the first two pics, that's our neighbor's yard (our South FL Yankee friends) and part of our front lawn. The second pic is of our much needed grass backyard. :D Yeah, we haven't sod it yet. Maybe next year. And the front yard is a mess where we had to run a drainline from the septic tank in February. So, there is very little grass. As I said....maybe next year.

But, we are kinda hesitant on running water. We need rain badly. Instead of inches under the water level, we are feet in need!

L.A...we rode that out last year...couldnt get any rain,this year has been different..they said that in March,that we had more rain than the entire year of 2011....good luck.

I have a Brinkman electric smoker. a Weber charcoal grill and a Holland gas grill.

Ummmmmmmm real BarbQue aint cooked on nuffin gas or lectric. Ummmmmmmm low n slow with real smoke .Me... i use red oak kause thats what we have an abundance of, but mesquite, pecan, hikkery, and even maple aint bad neither. I have heard apple is also good but sadly we dont have none of that round here so I kaint honestly say.
if ya wanna giggle the best grilled steak I ever ate came from a pit called a barbocca and for fuel it used double sheets of wadded up newspaper. I bleve maybe 10 of em anyways the newspaper is made from wood pulp and burns sooooooooooo hot it cooks quick fast and inna hurry and instills a definate wood flavor into whatever goes on the grill. Start to finish a steak Maybe 5 minnutes. a burger maybe 3. No waiting for the charcoal to light and not much in the way of ashes to clean up. And fuel was free more or less. Wish I could find anudder one

The Boss likes to smoke with pecan. My brother sent him some pecan at Easter for his birthday. I asked was he glad to get that kind of gift. He grinnned and said, "Your brother knows who cooks at these family shindigs of yours." So true! :D

I use hickory mostly, I got a bunch of scraps left from a building project and I have a buddy that makes cabinets and trim with hickory. He gives me scraps. Once in a while I'll use apple and cherry from old orchards and soimetimes maple.

two questions Duck...one,,,what is cisco,looks to be a fish...we must not have that here in the south..........two....what does the apple chips do for the meat?Does it make it taste sweet?

Cisco are in the same family as Whitefish and Menominee. They are an oily fish and great for smoking. Whitefish are big hit at the dinner table, a lot of folks broil and blacken them too.

The cherry and apple trees give a sweeter, fruity smoke. Maple, just like you may think, gives a maple flavor to the smoke.

The occaision was they were fresh, I had cold beer to go with them. Seemed reasonable at the time.
